Tequila Carrots with Curry Tahini Sauce is a wonderful recipe for vegetarians or carrot lovers who also want a bit of tequila added in their vegetables. The dish doesn’t only add flavor to your meals, but it also adds color and can be served hot, warm or cold.

Ingredients:

Produce

  • ½ pound carrots (4 pieces) they should be peeled and then cut into ⅜ in x 3 in lengths
  • 1 Cilantro or you can use parsley leaves
  • 1 tbsp Orange zest

Condiments

  • 2 tbsp Lime juice that is fresh squeezed
  • 2 tsp Maple syrup
  • 1/4 cup Sesame tahini that is toasted

Baking & Spices

  • 1 tsp purchased curry powder
  • 1 pinch fine sea salt
  • ¼ tsp fine sea salt

Oils & Vinegar

  • 4 tsp Olive oil, extra virgin

Beer, Wine & Liquor

  • ¼  cup Tequila (100% Agave)

Liquids

  • ¼ cup of hot water

Cooking Procedure:

  1. Put the carrots, tequila and orange zest in a medium sized saucepan

  2. Start to cook over medium-low heat and cover the pan for 10 minutes. Do this until the carrots get tender

  3. Begin whisking the tahini together with the hot water. Then whisk in the maple syrup, lime juice, the curry powder, olive oil and lastly, the salt

  4. Once the carrots are cooked, toss it with olive oil and start seasoning with salt

Transfer the mix unto a serving dish and drizzle the tahini sauce. You can then add garnish plus chopped parsley or cilantro

2. Hawaiian Tequila Chicken Salad With Pineapple Vinaigrette

The Hawaiian Tequila Chicken Salad With Pineapple Vinaigrette is surely a health buff’s dream. If you have cravings for tequila and chicken but want to stick with your salad diet, then you should start eyeing this recipe.


It’s a tasty, bright-looking, fresh and healthy salad that you can have as your meal at the start of the day. An American-Hawaiian salad that takes up 20-minute preparation time and 20-minute cooking time. This recipe creates up to 6 servings, offers 362 cal, and comes from halfbakedharvest.

 

Ingredients:


Chicken

  • 1 pound of boneless chicken breasts or tenders
  • 1/4 cup of tequila (any choice)
  • 2 tbsp of olive oil
  • 2 tbsp of soy sauce
  • 2 tbsp of organic ketchup
  • Juice of 1 lime
  • 1 clove of garlic minced or grated
  • 1 jalapeno seeded and also chopped
  • 1 inch of chipotle chili adobo chopped plus 1 tbsp of the adobo sauce
  • ½ of a ripe pineapple peeled and cut into half moons

Salad

  • 2 heads of romaine lettuce that are chopped
  • 1 cup of watercress or spinach
  • ½ cup of fresh cilantro that is roughly chopped
  • 1 pc Persian cucumber sliced
  • 1 pc avocado sliced
  • 1 pc grapefruit and or kiwi peeled that is chopped
  • 1 cup of heirloom cherry tomatoes that have been halved
  • flaked coconut for topping
  • wonton chips optional

Pineapple Vinaigrette

  • ½ cup of pineapple juice
  • 1-inch fresh ginger root that has been peeled
  • 1 tbsp of peanut butter
  • 1 tbsp of sriracha
  • ¼ cup of peanut or sesame oil
  • 2 tbsp of rice vinegar
  • ¼ cup of fresh basil and cilantro
  • salt to taste

Cooking Procedure:

  1. Using a large gallon size ziplock bag, mix the tequila, olive oil, soy sauce, ketchup, lime juice, garlic, jalapeno, and chipotle pepper. Add in 1 tbsp of adobo sauce
  2. Then you can add the chicken and add the marinade into the chicken. Make sure it’s seasoned well
  3. Put the mix in the fridge for half an hour or even up to 12 hrs if needed
  4. Once the chicken is ready to cook, heat up a  large cast iron skillet or you can also use a grill pan. Heat them on medium-high
  5. Start to grill the chicken for 7 to 8 minutes and flip it while cooking for another 7 to 8 minutes. The length of time to cook your chicken will highly depend on how thick the slices are and the size of the chicken
  6. When cooked, remove the chicken from the heat and let it rest for about 5 mins before slicing
  7. Add and sear the pineapple on the hot pan until it turns lightly golden in color. Make sure the pineapple has caramelized on both sides before removing from heat
  8. Transfer onto a serving plate and toss together with cilantro, grapefruit, lettuce, tomatoes, watercress, and cucumber. Add in the sliced chicken, pineapple and avocado
  9. For the pineapple chile vinaigrette, you can combine all the ingredients in a blender except for the cilantro and basil. Blend them until smooth and finally add the cilantro and basil. You can also season it with salt if needed

Ingredients:

  • 3 tbsp of fresh lime juice
  • 1 tbsp of honey
  • 2 tbsp of tequila (any choice)
  • ¼ cup of olive oil
  • ½ bunch of cilantro that is washed and trimmed at the ends
  • Salt
  • Pepper

Procedure:

  1. Using a food processor, add in the honey, juice and the tequila
  2. Pulse to combine them and add cilantro while processing and get to a smooth texture
  3. Make sure to set the food processor to its lowest settings and then you can add the olive oil
  4. You can then use the salt and pepper to season to taste
  5. The dressing is said to last for up to 7 days in the fridge. It thickens while it cools and you can just add water to make it thin again


How-To-Make-Tequila-Coleslaw

Give your regular coleslaw that unique flavor by adding tequila!

 

Ingredients:

  • ¼ cup of mayonnaise
  • 3 tbsp of lime juice (fresh)
  • 2-3 tbsp of fresh cilantro that is minced
  • 1 tbsp of tequila (silver is recommended)
  • 3 tsp of granulated sugar
  • ¼ tsp of salt
  • pinch of black pepper
  • ⅓ cup of green onions which are thinly sliced
  • 1 ¾  cups of coleslaw mix (or you can use shredded cabbage and carrots)
  • ½ cup of shredded red cabbage

 

Procedure:

  1. Get a large mixing bowl and add in the first 7 ingredients on the list (with the black pepper) and whisk them all until smooth
  2. You can then add the green onions, red cabbage, coleslaw mix, and start tossing to combine them
  3. After, cover them up and put them in the fridge for an hour or so for the flavors to truly mix together well

 

5. Tequila Lime Shrimp

Tequila Lime Shrimp doesn’t only look appetizing, but it offers a whirlwind of flavors as well. It’s a simple dish but with the help of tequila, it becomes this very flavorful concoction that highlights the tequila, lime and shrimp flavors of the dish.

It’s very easy to prepare and can only take 10 minutes of preparation time and 20 minutes of cooking time. You can serve it over pasta, rice or even use it as stuffing for tortillas. Considered as a Mexican inspired seafood entree, it can create 4 servings in total and is 305 cal.

 

Ingredients:

  • 1 pound of peeled and deveined shrimp which is raw
  • 1 tsp of salt
  • ½ tsp of pepper
  • 3 dried ancho chili peppers with its stems and seeds removed
  • 2 tbsp of olive oil
  • 4 cloves garlic which is grated
  • 2 ounces of tequila
  • ¼ cup of lime juice
  • 2 tbsp of butter

 

Cooking Procedure:

  1. Prepare the shrimp by sprinkling salt and pepper on it evenly. Set aside afterward
  2. Put the dried chilies in a bowl and then cover it with boiling water. You can then steep the chilies in hot water until they begin to soften (usually wait time can be 20 mins)
  3. Puree the chilies with ½ cup of steeping liquid inside a blender or food processor. Mix/blend it until smooth and set aside
  4. Using a large and deep skillet, heat it over medium-high temperature. You can then add the olive oil and stir in the garlic until it becomes fragrant (stirring time is usually around 15 secs). Make sure that they are not burned
  5. Add in your shrimp to the pan, not overcrowding them. For each side, make sure that you can heat them at around 90 seconds. Once the shrimp is cooked, remove it from the heat and set aside (this can go for 3 to 4 mins usually)
  6. You can now add your tequila on the hot skillet and deglaze the brown bits on the bottom of the pan if any (it is recommended to use a wooden spoon here)
  7. Go back to the cooked shrimp and add them to the pan with the pureed chilis and also the lime juice. Carefully bring the heat to simmer and then reduce it to low for about 4 to 5 mins (you can also wait until they are warm)
  8. Prepare your rice, pasta or warmed tortillas and serve them with the cooked shrimp
